His culinary path led him from the kitchens of small farms to the prestigious 3-star Michelin restaurants of Spain, Italy, and France, where he discovered the foundational importance of broth in cuisine.

Driven by a passion for quality and sustainability, Dana has been involved with biodynamics and regenerative agriculture for 18+ years. As a dedicated Farm Manager with 12 years of experience at a private school and farm, Dana transformed raw land into a thriving, diverse agricultural ecosystem. His mastery of regenerative farming practices has led to significant advancements in soil health, biodiversity, and overall farm productivity.

With a proven track record of implementing innovative techniques and maintaining Biodynamic farm certification, Dana's holistic approach to land management reflects his unwavering commitment to environmental stewardship.
